Vegan hummus sandwiches on toasted

Ingredients:
4 slices of sourdough bread
1 can of chickpeas, drained and rinsed
2 cloves of garlic, minced
3 tablespoons of tahini
Juice of 1 lemon
1/4 cup of olive oil
Salt and pepper to taste
1 avocado, sliced
1 small cucumber, sliced
1 small red onion, sliced
Handful of fresh spinach leaves
Instructions:
Preheat oven to 375°F (190°C).
Toast the sourdough bread slices in the oven for 5-7 minutes or until crispy.
In a food processor, combine the chickpeas, garlic, tahini, lemon juice, olive oil, salt, and pepper. Pulse until smooth.
Spread a generous amount of hummus on each slice of toasted sourdough.
Layer the avocado, cucumber, red onion, and spinach on top of the hummus.
Serve immediately and enjoy!
