Twice-baked potato halves loaded with melted cheese and garnished with fresh parsley

Ingredients:
– 4-6 medium-sized potatoes
– 1/4 cup butter or margarine, softened
– 1/2 cup grated cheddar cheese (or other cheese of your choice)
– 1/4 cup milk or cream
– Salt and pepper to taste
– Fresh parsley or chives for garnish (optional)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Scrub the potatoes clean and dry them with a paper towel. Poke some holes in each potato with a fork to allow steam to escape.
3. Rub the potatoes with a little bit of oil and bake them directly on the middle rack of the oven for 45-60 minutes, or until they’re tender when pierced with a fork.
4. Remove the potatoes from the oven and let them cool for a few minutes.
5. Slice the potatoes in half lengthwise and scoop out most of the flesh, leaving about 1/8 inch of the potato around the skin.
6. In a bowl, mash the scooped-out potato flesh with the softened butter, grated cheese, milk or cream, salt, and pepper until you get a smooth and creamy mixture.
7. Stuff each potato shell with the mashed potato mixture, dividing it evenly among the potatoes.
8. Place the stuffed potatoes on a baking sheet lined with parchment paper and bake them in the oven at 400°F (200°C) for an additional 15-20 minutes, or until they’re golden brown and heated through.
9. Remove the potatoes from the oven and garnish with fresh parsley or chives, if desired.
10. Serve the twice-baked potatoes hot and enjoy
