Twice Baked Cauliflower

Ingredients:
- 1 large head of cauliflower
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup sour cream or Greek yogurt
- 1 cup shredded cheddar cheese (or cheese of your choice)
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped green onions or chives (optional)
- 1/4 cup cooked bacon bits (optional, for extra flavor)
- 1/4 cup finely chopped fresh parsley or basil (optional, for garnish)

Instructions:
- Preheat Oven:
- Preheat your oven to 400°F (200°C).
- Prepare Cauliflower:
- Cut the cauliflower into florets. Place them in a large pot and cover with water. Bring to a boil and cook for about 10-15 minutes, or until the cauliflower is tender and easily pierced with a fork. Drain well.
- Mash Cauliflower:
- Place the cooked cauliflower in a large bowl. Use a potato masher or an immersion blender to mash it until smooth. You can also use a food processor for a finer texture.
- Mix Ingredients:
- Stir in the olive oil, sour cream (or Greek yogurt), 1/2 cup of cheddar cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined. If using, stir in the green onions or chives and bacon bits.
- Prepare for Baking:
- Spoon the cauliflower mixture into a baking dish or individual ramekins. Smooth the top with a spatula.
- Add Topping:
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the cauliflower mixture.
- Bake:
- Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.
- Garnish and Serve:
- Remove from the oven and let cool for a few minutes. If desired, garnish with freshly chopped parsley or basil before serving.
Tips:
- For extra flavor, consider adding a pinch of paprika, onion powder, or a dash of hot sauce to the cauliflower mixture.
