Twice Baked Cauliflower

Ingredients:

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese (or cheese of your choice)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped green onions or chives (optional)
  • 1/4 cup cooked bacon bits (optional, for extra flavor)
  • 1/4 cup finely chopped fresh parsley or basil (optional, for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare Cauliflower:
    • Cut the cauliflower into florets. Place them in a large pot and cover with water. Bring to a boil and cook for about 10-15 minutes, or until the cauliflower is tender and easily pierced with a fork. Drain well.
  3. Mash Cauliflower:
    • Place the cooked cauliflower in a large bowl. Use a potato masher or an immersion blender to mash it until smooth. You can also use a food processor for a finer texture.
  4. Mix Ingredients:
    • Stir in the olive oil, sour cream (or Greek yogurt), 1/2 cup of cheddar cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined. If using, stir in the green onions or chives and bacon bits.
  5. Prepare for Baking:
    • Spoon the cauliflower mixture into a baking dish or individual ramekins. Smooth the top with a spatula.
  6. Add Topping:
    • Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the cauliflower mixture.
  7. Bake:
    • Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.
  8. Garnish and Serve:
    • Remove from the oven and let cool for a few minutes. If desired, garnish with freshly chopped parsley or basil before serving.

Tips:

  • For extra flavor, consider adding a pinch of paprika, onion powder, or a dash of hot sauce to the cauliflower mixture.
  • You can also mix in other ingredients such as cooked spinach, sun-dried tomatoes, or mushrooms to customize the dish to your taste.
