Ingredients

For the Texas Toast

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp butter (melted)
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese

For the Sloppy Joe Filling

  • 1 lb ground beef (80/20)
  • 1/2 cup sugar-free ketchup
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup grated cheddar cheese

Instructions

Step 1: Make the Keto Texas Toast

  1. Preheat your oven to 375°F (190°C).
  2. Mix almond flour, coconut flour, baking powder, and salt in a bowl.
  3. Add melted butter, eggs, and mozzarella cheese. Stir well until a thick dough forms.
  4. Spread the dough on a parchment-lined baking tray to form rectangular slices. Shape them like thick toast slices.
  5. Bake for 12–15 minutes until golden brown.

Step 2: Prepare the Sloppy Joe Filling

  1. In a skillet over medium heat, brown the ground beef. Drain excess fat.
  2. Add sugar-free ketchup, tomato paste, Worcestershire sauce, mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir and simmer for 5–7 minutes.
  3. Sprinkle grated cheddar cheese on top and let it melt.

Step 3: Assemble the Texas Toast Sloppy Joes

  1. Place a spoonful of the Sloppy Joe mixture on each keto Texas toast slice.
  2. Optionally, broil in the oven for 1–2 minutes to toast the top.
  3. Garnish with fresh parsley or jalapeños for extra flavor.
