Ingredients
For the Texas Toast
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp butter (melted)
- 2 large eggs
- 1/2 cup shredded mozzarella cheese
For the Sloppy Joe Filling
- 1 lb ground beef (80/20)
- 1/2 cup sugar-free ketchup
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp mustard
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup grated cheddar cheese
Instructions
Step 1: Make the Keto Texas Toast
- Preheat your oven to 375°F (190°C).
- Mix almond flour, coconut flour, baking powder, and salt in a bowl.
- Add melted butter, eggs, and mozzarella cheese. Stir well until a thick dough forms.
- Spread the dough on a parchment-lined baking tray to form rectangular slices. Shape them like thick toast slices.
- Bake for 12–15 minutes until golden brown.
Step 2: Prepare the Sloppy Joe Filling
- In a skillet over medium heat, brown the ground beef. Drain excess fat.
- Add sugar-free ketchup, tomato paste, Worcestershire sauce, mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir and simmer for 5–7 minutes.
- Sprinkle grated cheddar cheese on top and let it melt.
Step 3: Assemble the Texas Toast Sloppy Joes
- Place a spoonful of the Sloppy Joe mixture on each keto Texas toast slice.
- Optionally, broil in the oven for 1–2 minutes to toast the top.
- Garnish with fresh parsley or jalapeños for extra flavor.
