Tastes better than pizza! High in protein, clean eating
Ingredients
(The measurements are given in both US and European units for ease of preparation.)
Main ingredients:
- Oatmeal: 1 cup (90 g)
- Salt: 1 tsp (5 g)
- Dried garlic: ½ tsp (1 g)
- Italian herbs: 1 tsp (2 g)
- Cottage cheese: 1 cup (240 g)
- Mozzarella (grated): ½ cup (50 g)
- Eggs :3 pieces
- Avocado oil: 2 tbsp (30 ml)
For the topping:
- Arugula: ½ cup (15 g), chopped
- Spring onions: 2-3 stalks, chopped
- Small tomatoes: ½ cup (75 g), diced
- Parmesan (grated): ¼ cup (25 g)
- Mozzarella (grated): ¼ cup (25 g)
- Additional Italian herbs: ½ tsp (1 g)
preparation
1. Prepare dry ingredients
- In a large bowl, combine the oats, salt, dried garlic and Italian herbs.
- Mix well so that the spices are evenly distributed.
2. Mix wet ingredients
- In a separate bowl, mix together the cottage cheese, grated mozzarella and eggs.
- Stir well until the mixture is smooth.
3. Mix everything together
- Add the wet ingredients to the dry ingredients and mix well until a homogeneous dough is formed.
- There should be no dry spots visible anymore.
4. Prepare the muffin tin
- Preheat oven to 180°C (360°F).
- Grease the muffin tin: Grease the muffin tin with avocado oil so that the muffins do not stick and can be easily removed.
5. Form muffins
- Divide the batter evenly into the muffin tins.
- The molds should be about ¾ full so that the muffins can rise nicely.
6. Add toppings
- Distribute the chopped rocket, spring onions and diced small tomatoes evenly over the muffins.
- Then sprinkle with Parmesan, mozzarella and a pinch of additional Italian herbs.
7. Baking
- Place the muffin tin in the preheated oven and bake for about 30 minutes , until the muffins are golden brown.
- Test with a toothpick – if it comes out clean, the muffins are ready.
- After baking, let it cool in the tin for a few minutes, then let it cool completely on a wire rack.
