  • Parmesan (grated): ¼ cup (25 g)
  • Mozzarella (grated): ¼ cup (25 g)
  • Additional Italian herbs: ½ tsp (1 g)

preparation

1. Prepare dry ingredients

  • In a large bowl, combine the oats, salt, dried garlic and Italian herbs.
  • Mix well so that the spices are evenly distributed.

2. Mix wet ingredients

  • In a separate bowl, mix together the cottage cheese, grated mozzarella and eggs.
  • Stir well until the mixture is smooth.

3. Mix everything together

  • Add the wet ingredients to the dry ingredients and mix well until a homogeneous dough is formed.
  • There should be no dry spots visible anymore.

4. Prepare the muffin tin

  • Preheat oven to 180°C (360°F).
  • Grease the muffin tin: Grease the muffin tin with avocado oil so that the muffins do not stick and can be easily removed.

5. Form muffins

  • Divide the batter evenly into the muffin tins.
  • The molds should be about ¾ full so that the muffins can rise nicely.

6. Add toppings

  • Distribute the chopped rocket, spring onions and diced small tomatoes evenly over the muffins.
  • Then sprinkle with Parmesan, mozzarella and a pinch of additional Italian herbs.

7. Baking

  • Place the muffin tin in the preheated oven and bake for about 30 minutes , until the muffins are golden brown.
  • Test with a toothpick – if it comes out clean, the muffins are ready.
  • After baking, let it cool in the tin for a few minutes, then let it cool completely on a wire rack.
