Tamale Pie

Ingredients
1 c. masa harina (fine cornmeal)
1/2 t. salt
1 T. oil
1 c. water
Mix and pat into pie pan
Filling:
Sauté 1/2 c. onion, 1/4 c. Green pepper and one minced clove of garlic in 2 T. “Butter” until soft. Combine with
10 oz. tomatoes, drained
7 oz. corn, drained (I used frozen)
14 oz.beans, drained (I used black beans)
1/2 c. sliced black olives
2 t. chili powder
1/2 t. salt
2 T. flour
Put filling into crust and bake 400 degrees for 20-25 minutes. Remove from oven and sprinkle with grated “cheese” then bake 5 more minutes.
