Taco Cupcakes Recipe (Weight Watchers)

Ingredients:
- 12 wonton wrappers
- 1/2 pound lean ground turkey or beef
- 1 packet taco seasoning mix (low-sodium if preferred)
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup salsa
- 1/2 cup reduced-fat shredded cheddar cheese
- 1/4 cup chopped green onions
- Cooking spray
- Optional toppings: light sour cream, diced tomatoes, chopped cilantro, avocado slices
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Spray a 12-cup muffin tin with cooking spray.
- Cook Meat: In a skillet over medium heat, cook the ground turkey or beef until browned. Drain any excess fat. Add the taco seasoning mix and follow package instructions to prepare the taco meat. Stir in the black beans, corn, and salsa, and cook for another 2-3 minutes until heated through.
- Assemble Cupcakes: Place one wonton wrapper into each muffin cup, pressing it down and up the sides to form a cup. Spoon a tablespoon of the taco meat mixture into each wonton cup. Sprinkle with a bit of shredded cheese, then place another wonton wrapper on top and press down gently. Add another tablespoon of the meat mixture and top with more cheese.
- Bake: Bake in the preheated oven for about 15-18 minutes, or until the wonton wrappers are golden brown and the cheese is melted and bubbly.
- Garnish: Remove from the oven and let cool for a few minutes. Remove the taco cupcakes from the muffin tin and top with green onions and any additional optional toppings like light sour cream, diced tomatoes, chopped cilantro, or avocado slices.
- Serve: Serve warm and enjoy your delicious and healthy taco cupcakes!
