Diabetic-Friendly Stuffed Cabbage Rolls

๐งพ Ingredients (Serves 6)
For the Rolls:
- 1 large green cabbage
- 1 lb (450g) lean ground beef or turkey
- 1 cup cauliflower rice (fresh or frozen, squeezed dry)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1 tsp paprika
- 1 tsp dried oregano
- Salt & pepper to taste
For the Sauce:
- 2 cups crushed tomatoes (no sugar added)
- 2 tbsp tomato paste (check label โ no added sugar)
- 1 tsp olive oil
- 1 tsp Italian seasoning
- ยฝ tsp smoked paprika
- Salt & pepper
- Optional: pinch of erythritol if tomatoes taste too acidic
๐ฉโ๐ณ Instructions
- Prepare cabbage
- Core cabbage and boil whole head 5โ8 minutes.
- Peel off softened leaves carefully.
- Trim thick stem if needed.
- Make filling
- Mix ground meat, cauliflower rice, onion, garlic, egg, and seasonings.
- Do not overmix.
- Roll
- Place 2โ3 tbsp filling in each leaf.
- Fold sides in and roll tightly.
- Prepare sauce
- Mix crushed tomatoes, paste, oil, and seasonings.
- Assemble
- Spread a little sauce on bottom of baking dish.
- Place rolls seam-side down.
- Pour remaining sauce on top.
- Bake
- Cover with foil.
- Bake at 350ยฐF (175ยฐC) for 60โ75 minutes.
