Diabetic-Friendly Strawberry Cheesecake Wonton Bites
🧾 Ingredients (10–12 bites)
- 10–12 wonton wrappers
- ½ cup cream cheese (softened, low-fat if preferred)
- 2–3 tbsp powdered erythritol or stevia blend
- ½ tsp vanilla extract
- ½ cup fresh strawberries (finely chopped)
- 1 tbsp chia seeds (optional, adds fiber)
- Light cooking spray or a little oil
👩🍳 Instructions
1. Preheat & prep
- Preheat oven to 180°C (350°F).
- Lightly grease a muffin tray.
2. Make filling
- Mix cream cheese, sweetener, and vanilla until smooth.
- Fold in chopped strawberries and chia seeds.
3. Shape wontons
- Press each wonton wrapper into muffin cups to form little shells.
- Add 1 spoon of filling into each.
4. Bake (not fry)
- Bake for 10–12 minutes until edges are golden and crisp.
5. Cool slightly
- Let them cool before removing—they’ll firm up as they set.
