Diabetic-Friendly Strawberry Cheesecake Wonton Bites

🧾 Ingredients (10–12 bites)

  • 10–12 wonton wrappers
  • ½ cup cream cheese (softened, low-fat if preferred)
  • 2–3 tbsp powdered erythritol or stevia blend
  • ½ tsp vanilla extract
  • ½ cup fresh strawberries (finely chopped)
  • 1 tbsp chia seeds (optional, adds fiber)
  • Light cooking spray or a little oil

👩‍🍳 Instructions

1. Preheat & prep

  • Preheat oven to 180°C (350°F).
  • Lightly grease a muffin tray.

2. Make filling

  • Mix cream cheese, sweetener, and vanilla until smooth.
  • Fold in chopped strawberries and chia seeds.

3. Shape wontons

  • Press each wonton wrapper into muffin cups to form little shells.
  • Add 1 spoon of filling into each.

4. Bake (not fry)

  • Bake for 10–12 minutes until edges are golden and crisp.

5. Cool slightly

  • Let them cool before removing—they’ll firm up as they set.
