Spring rolls


Round rice papers, dip one at a time fully in water for about 10 seconds then lay it flat and put in your fillings. I used:
Red bell pepper cut in thin strips
Carrot cut in thin strip
Cucumber cut in thin strips
Shredded red cabbage
Lettuce
Rice noodles that I cooked and cooled.
Roll them up and fold in the sides as you go. The trick is to keep it tight.
I made dipping sauce, just mixture following together
3 tablespoons peanut butter
1/3 cup Hoison sauce teaspoon rice vinegar
3 tablespoons water
So yummy and a fun way to get veggies.
