8 fresh peaches, peeled, pitted, and sliced (or use 6 cups of canned peaches, drained)

6 tbsp unsalted butter, melted
1 tsp ground cinnamon (optional, for sprinkling)
Instructions:
Prepare the Filling:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Mix well to coat the peaches evenly. If you prefer a thicker filling, add the cornstarch and mix again.
Pour the peach mixture into a 9×13-inch baking dish.
Make the Topping:
In a separate mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Add the egg and mix until the mixture resembles coarse crumbs.
Evenly sprinkle the topping over the peaches in the baking dish.
Add Butter:
Drizzle the melted butter evenly over the topping. If you like, sprinkle some ground cinnamon over the top for extra flavor.
Bake:
Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the filling is bubbling.
Serve:
Let the cobbler cool slightly before serving. It’s delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
