- 36 buttery round or square crackers such as butter crackers, lightly crushed
- 2 large ripe tomatoes diced
- 3 green onions thinly sliced
- 3 hard-boiled eggs chopped
- 1 cup mayonnaise
- ½ cup plain Greek yogurt or additional mayonnaise
- 1 teaspoon Dijon mustard optional, for extra flavor
- ¼ teaspoon kosher salt or to taste
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh parsley optional
Instructions
- Coarsely crush the crackers into bite-sized pieces, leaving a few larger chunks for texture. Place them in a large mixing bowl.
- Add the diced tomatoes, sliced green onions, and chopped hard-boiled eggs.
- In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard (if using), salt, and black pepper until smooth.
