Southern Georgia Cracker Salad

This Georgia Cracker Salad is a creamy Southern classic made with crunchy crackers, fresh tomatoes, and simple pantry ingredients—perfect for potlucks, summer gatherings, BBQs, and easy side dishes.

Ingredients

  • 36 buttery round or square crackers such as butter crackers, lightly crushed
  • 2 large ripe tomatoes diced
  • 3 green onions thinly sliced
  • 3 hard-boiled eggs chopped
  • 1 cup mayonnaise
  • ½ cup plain Greek yogurt or additional mayonnaise
  • 1 teaspoon Dijon mustard optional, for extra flavor
  • ¼ teaspoon kosher salt or to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley optional

Instructions

  • Coarsely crush the crackers into bite-sized pieces, leaving a few larger chunks for texture. Place them in a large mixing bowl.
  • Add the diced tomatoes, sliced green onions, and chopped hard-boiled eggs.
  • In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard (if using), salt, and black pepper until smooth.
  • Pour the dressing over the cracker mixture and gently fold everything together until evenly coated.
  • Let the salad rest for 5–10 minutes so the crackers soften slightly while still keeping some texture.
  • Taste and adjust the seasoning if needed. Sprinkle with parsley before serving if desired.
  • Serve immediately for the best texture, or chill for up to 30 minutes if you prefer a cooler salad.
