Smothered Chicken with Creamed Spinach Bacon And Mushrooms

Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
For the Creamed Spinach:
- 4 cups fresh spinach leaves
- 4 slices bacon, chopped
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste

Instructions
Preparing the Chicken:
- Season the Chicken:
- Season the chicken breasts with salt, pepper, paprika, garlic powder, and onion powder on both sides.
- Cook the Chicken:
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts and cook for 6-7 minutes on each side or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
Preparing the Creamed Spinach with Bacon and Mushrooms:
- Cook the Bacon:
- In the same skillet, add the chopped bacon and cook until crispy.
- Remove the bacon and set aside, leaving the bacon fat in the skillet.
- Sauté the Mushrooms:
- Add the sliced mushrooms to the skillet and cook for 4-5 minutes until they start to brown.
- Add Garlic and Spinach:
- Add the minced garlic and fresh spinach to the skillet.
- Cook until the spinach is wilted, about 2-3 minutes.
- Add Cream and Cheese:
- Pour in the heavy cream and bring to a simmer.
- Stir in the grated Parmesan cheese until melted and combined.
- Season with salt and pepper to taste.
Assembling the Dish:
- Combine Everything:
- Add the cooked bacon back to the skillet.
- Return the chicken breasts to the skillet, nestling them into the creamed spinach mixture.
- Spoon some of the sauce over the chicken breasts.
- Simmer:
- Let everything simmer together for a few minutes until the chicken is heated through and well-coated with the sauce.
- Serve:
- Serve the smothered chicken with creamed spinach, bacon, and mushrooms immediately. Enjoy!

- Serve with mashed potatoes, rice, or pasta to soak up the delicious sauce.
- You can substitute chicken thighs for chicken breasts if preferred.
