Slow Cooker Split Pea Soup

Serves 7

1 (16 oz.) package dried green split peas, rinsed

11.5 oz. diced ham

21 baby carrots, chopped

1 medium onion, chopped

4 stalks celery, chopped

5 medium potatoes, peeled and chopped

½ teaspoon minced garlic

1 medium bay leaf

2 teaspoons salt

1/4 teaspoon pepper

7 cups water

2 cups unsweetened original almond milk

Layer in a slow cooker, in order, peas, ham, carrots, onion, celery, potatoes, garlic, bay leaf, salt, and pepper. Pour in water. DO NOT STIR.

Cover and cook on high for 5 hours or low for 10 hours.

Remove bay leaf.

Stir in milk. Cover and cook on high for 30 additional minutes.
