Slow Cooker Garlic Herb Beef Roast

This slow cooker beef roast is rich, savory, and incredibly tender. The browned exterior of the beef develops deep flavor while the slow cooking process allows the garlic, herbs, broth, and Worcestershire sauce to create a delicious savory cooking liquid. The carrots and potatoes absorb the flavorful juices, making this a complete and satisfying meal.

Ingredients Quantity

  • 1.5–2 kg beef roast, such as chuck roast or round roast
  • 3–4 tablespoons olive oil
  • 5–6 cloves garlic, minced
  • 1½ cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon onion powder
  • 1 large onion, sliced
  • 3–4 carrots, cut into large pieces
  • 500–700 g potatoes, cut into chunks
  • 2 tablespoons butter, optional
  • 1 tablespoon cornstarch, optional, for thickening the gravy

Optional Additions

For extra flavor, you can add mushrooms, celery, bay leaves, red wine, or a small amount of Dijon mustard. Fresh parsley can also be sprinkled over the finished roast for freshness and color.

Instructions

  1. Pat the beef roast dry with paper towels and season all sides with salt, black pepper, paprika, thyme, rosemary, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the beef for several minutes on each side until nicely browned.
  3. Place the sliced onion, carrots, and potatoes in the bottom of the slow cooker.
  4. Put the seared beef roast on top of the vegetables.
  5. Combine the beef broth, Worcestershire sauce, and minced garlic, then pour the mixture around the roast.
  6. Cover and cook on LOW for approximately 7–9 hours, or until the beef is very tender.
  7. Carefully remove the roast and vegetables from the slow cooker and allow the meat to rest for about 10–15 minutes before slicing or shredding.
  8. For thicker gravy, transfer some of the cooking liquid to a saucepan and whisk in a cornstarch slurry made with cornstarch and cold water. Simmer until thickened.
  9. Serve the tender beef with the vegetables and spoon the flavorful cooking juices or gravy over the top.
  10. Garnish with fresh parsley if desired.
