Salted Caramel Crunch Protein Fluff Cups

Creamy, fluffy, high-protein dessert cups with a delicious salted-caramel cheesecake flavor and crunchy topping. Perfect for meal prep!

 Ingredients — 4 cups

  • 1 box sugar-free Salted Caramel Crunch Cheesecake Jell-O pudding mix
  • 1½ cups unsweetened almond milk
  • 1 cup nonfat Greek yogurt
  • 1 scoop vanilla protein powder
  • ½ tsp vanilla extract
  • Pinch of sea salt
  • 2 tbsp sugar-free caramel sauce
  • ¼ cup chopped sugar-free caramel/toffee pieces or chopped nuts
  • Optional: ½ cup light whipped topping for extra fluffiness

Instructions

  1. Add the almond milk and sugar-free cheesecake mix to a large bowl.
  2. Whisk for about 2 minutes, until it starts to thicken.
  3. Add Greek yogurt, protein powder, vanilla, sea salt, and caramel sauce.
  4. Whisk until completely smooth and creamy.
  5. Fold in the whipped topping if using.
  6. Gently mix in half of the chopped caramel/toffee pieces.
  7. Divide the mixture between 4 small cups.
  8. Refrigerate for at least 1–2 hours until thick and chilled.
  9. Before serving, drizzle with a little sugar-free caramel sauce and sprinkle with the remaining crunchy topping.

Approximate nutrition

Per cup: ~150–190 calories and 15–20g protein, depending on the protein powder, yogurt, and toppings used.

Storage: Keep covered in the refrigerator for up to 4 days.
