Ingredients (makes 4–6 patties):
- 1 can (14–15 oz / 400–425 g) salmon, drained
- 1 egg
- ¼ cup finely chopped onion
- 2 tbsp chopped fresh parsley or coriander
- 1 tsp lemon juice
- ½ tsp garlic powder
- ½ tsp black pepper
- ¼ tsp salt (optional)
- 2–3 tbsp almond flour or ground oats
- 1 tsp olive oil for cooking
Instructions:
- Remove salmon bones/skin if desired and flake the salmon.
- Mix salmon, egg, onion, herbs, lemon juice, and seasonings.
- Add almond flour gradually until the mixture holds together.
- Form into 4–6 patties.
- Heat olive oil in a non-stick pan over medium heat.
- Cook patties about 3–4 minutes per side, until golden and cooked through.
- Serve with a large salad or steamed vegetables.
For diabetes: Avoid adding breadcrumbs or regular flour, and skip sugary sauces. A spoonful of plain unsweetened Greek yogurt mixed with lemon and herbs makes a good topping.
