This Roasted Garlic Butter Parmesan Potatoes recipe is a crispy, flavorful side made with golden roasted potatoes, garlic butter, and melted parmesan—perfect for easy dinners, holiday sides, and crowd-pleasing comfort food.

Ingredients

  • 2 lbs 900 g baby potatoes (halved)
  • 4 tbsp unsalted butter melted
  • 4 cloves garlic minced (or 1½ tsp garlic paste)
  • 1/3 cup 30 g grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1 tsp paprika optional, for color & flavor
  • 1 tsp Italian seasoning or dried herbs mix
  • 1 tbsp fresh parsley chopped (for garnish)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prep potatoes:
  • Wash and halve the baby potatoes. Pat them dry for better crisping.
  • Make garlic butter mix:
  • In a large bowl, combine melted butter, olive oil, minced garlic, salt, pepper, paprika, and Italian seasoning.
  • Coat potatoes:
  • Add potatoes to the bowl and toss well until evenly coated.
  • Add Parmesan:
  • Sprinkle in the grated Parmesan and toss again so it sticks to the potatoes.
  • Arrange for roasting:
  • Spread potatoes cut-side down in a single layer on the baking sheet.
  • Roast:
  • Bake for 35–40 minutes, or until golden brown and crispy on the edges. Flip halfway through for even roasting.
  • Finish & serve:
  • Remove from oven, sprinkle with fresh parsley, and serve immediately.
