🧾 Ingredients

For the Brie Bites

  • 8 oz (225 g) Brie cheese, cut into 1-inch cubes
  • ¼ cup all-purpose flour
  • ¼ cup unflavored or vanilla protein powder (whey or whey/casein blend)
  • 1 large egg, beaten
  • ¾ cup finely chopped pistachios
  • 2 tbsp grated Parmesan cheese (adds protein + flavor)
  • ½ tsp garlic powder
  • ¼ tsp black pepper

For Cooking

  • Cooking spray or 1 tbsp olive oil

High-Protein Fig Honey Glaze

  • ¼ cup non-fat Greek yogurt
  • 1½ tbsp fig jam
  • 1 tbsp honey
  • Pinch salt

👩‍🍳 Instructions

  1. Prep
    • Chill Brie cubes in the freezer 20 minutes (prevents melting).
  2. Set up breading station
    • Bowl 1: flour + protein powder
    • Bowl 2: beaten egg
    • Bowl 3: pistachios + Parmesan + garlic powder + pepper
  3. Coat the Brie
    • Roll each cube in flour mixture
    • Dip into egg
    • Press into pistachio mixture until fully coated
  4. Cook
    Air Fryer (best option):
    • Preheat to 375°F (190°C)
    • Lightly spray bites
    • Air fry 6–8 minutes, turning once
    Oven:
    • Bake at 400°F (205°C) for 10–12 minutes
    Pan-sear (optional):
    • Sear quickly on all sides over medium heat (watch closely)
  5. Make glaze
    • Stir Greek yogurt, fig jam, honey, and salt until smooth.
  6. Serve
    • Drizzle glaze over warm Brie bites or serve on the side.
