Pimento Cheese

Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese (or any cheese you like)
  • 1/4 cup diced pimentos, drained
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (adjust for spice)
  • Salt and pepper to taste
  • Chopped green onions or jalapeños (optional, for garnish)

Instructions:

  1. Mix Ingredients: In a mixing bowl, combine the softened cream cheese, shredded cheddar, Monterey Jack, diced pimentos, mayonnaise, and Dijon mustard.
  2. Season: Add garlic powder, onion powder, cayenne pepper, and salt and pepper to taste. Mix everything until well combined. You can use a hand mixer for a smoother texture or a spatula for a chunkier version.
  3. Chill: Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld.
  4. Serve: Enjoy with celery sticks, cucumber slices, or pork rinds. You can also use it as a spread on keto-friendly crackers!

Tips:

  • Feel free to adjust the cheese varieties based on your preference.
  • For extra flavor, consider adding a splash of hot sauce or Worcestershire sauce.
