Ingredients:
For the pancakes:
1 cup wheat flour
1 cup milk
1 egg
A pinch of salt
2 tablespoons oil for frying
Filling:
500 g fresh or canned peaches
2 tablespoons sugar
1 teaspoon cinnamon (optional)
Whipped cream sauce:
200 ml 30% cream
2 tablespoons sugar
1 teaspoon vanilla extract
1 egg
For the top:
2 tablespoons butter
Preparation:
Mix flour, milk, egg, and salt until a smooth pancake batter forms. Fry thin pancakes in a preheated pan.
Cut the peaches into cubes, mix with sugar and optionally cinnamon.
For each pancake, spread a portion of the fruit, roll in a roll or place in an envelope and arrange in a greased dish.
Prepare the sauce by mixing cream, sugar, egg, and vanilla. Pour over the pancakes.
Brush the top with butter and bake at 180°C for about 25 minutes, until the sauce slightly thickens and turns golden.
Serve warm, you can decorate with powdered sugar, mint, or serve with vanilla ice cream.
