Peach Cobbler baked Oats with a date caramel sauce

Ingredients:
For the Baked Oats:
1 cup rolled oats
1/2 cup milk (or dairy-free alternative)
1/2 tsp cinnamon
1/2 tsp baking powder
1 tbsp maple syrup or honey
1/2 tsp vanilla extract
1/2 cup diced peaches (fresh or frozen)
For the Date Caramel Sauce:
4-5 pitted dates
1/4 cup warm water
1/2 tsp vanilla extract
Pinch of salt
Instructions:
Preheat oven to 350°F (175°C).
In a bowl, mix oats, cinnamon, baking powder, milk, maple syrup, and vanilla. Fold in diced peaches.
Pour mixture into a greased baking dish and bake for 25-30 minutes until golden brown.
While baking, blend dates, warm water, vanilla, and salt until smooth to make the caramel sauce.
Drizzle the date caramel over the baked oats and enjoy!
