Parmesan Meatloaf

Ingredients
- 1 ½ lbs ground beef (or a mix of beef and pork)
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (Italian-style works best)
- 1 egg
- ½ cup milk
- ¼ cup chopped parsley
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup marinara sauce
- ½ cup shredded mozzarella cheese

Topping:
- ¼ cup marinara sauce
- ¼ cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mix the ingredients – In a large bowl, combine the ground beef, Parmesan, breadcrumbs, egg, milk, parsley, garlic powder, onion powder, oregano, salt, and pepper. Mix until just combined.
- Shape the meatloaf into a loaf shape and place it on the prepared baking sheet.
- Add toppings – Spread ¼ cup marinara sauce over the top, then sprinkle Parmesan cheese.
- Bake for about 45 minutes, then remove from the oven and spread the remaining marinara sauce over the top. Sprinkle mozzarella cheese on top and bake for another 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
