1 lb ground beef 80–90% lean
2 cans creamed corn 14 to 15 oz each
1 cup sour cream
1 cup shredded cheddar cheese plus extra if desired
1 tsp kosher salt
black pepper to taste
Instructions
Preheat the oven to 375°F and grease a 9×13-inch glass baking dish with cooking spray.
Crumble the raw ground beef into the baking dish, spreading it loosely and evenly without packing it down.
Wash hands thoroughly after handling the raw beef.
Sprinkle the kosher salt and black pepper over the beef.

In a bowl, stir together the creamed corn and sour cream until fully combined.
Pour the corn mixture over the beef and spread it evenly to cover as much of the meat as possible.
Sprinkle the shredded cheddar cheese evenly over the top.
Cover the dish tightly with foil.
Bake covered for 30 minutes.
Carefully remove the foil and bake uncovered for another 15–20 minutes, until the cheese is melted, lightly golden, and the edges are bubbling.
Check the center to make sure the beef is fully cooked with no pink remaining and reaches 160°F.
If needed, bake for another 5–10 minutes until fully cooked.
Let the casserole rest for 5–10 minutes before serving.
Notes
Do not pack the beef down; keeping it loose helps it cook evenly. Add extra cheddar on top for a cheesier finish.
