One Point Sheet Pan Pumpkin Bars
Ingredients:
- 1 cup canned pumpkin (not pumpkin pie filling)
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1/4 cup unsweetened applesauce
- 1/4 cup almond milk (or any milk of choice)
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
Optional:
- 1/4 cup chopped nuts or chocolate chips for added texture and flavor
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- Mix Wet Ingredients: In a large bowl, whisk together the canned pumpkin, eggs, maple syrup (or honey), applesauce, and almond milk until well combined.
- Combine Dry Ingredients: In another bowl, mix the whole wheat flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If you’re using nuts or chocolate chips, fold them in now.
- Pour and Bake: Pour the batter onto the prepared baking sheet and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Slice: Allow the bars to cool completely before cutting into squares.
