🍽️ One-Platter Comfort Meal

Steak. Chicken. Creamy Mushroom Pasta. Roasted Veggies.

🛒 Ingredients

🥩 For the Steak:

  • 2 small ribeye or sirloin steaks (about 1″ thick)
  • Salt & pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves (smashed)
  • Fresh rosemary or thyme (optional)

🍗 For the Chicken:

  • 2 boneless, skinless chicken breasts or thighs
  • Salt, pepper, paprika, garlic powder (or Italian seasoning)
  • 1 tbsp olive oil

🍝 For the Creamy Mushroom Pasta:

  • 250g (½ lb) pasta (fettuccine, penne, or spaghetti)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 250g (9 oz) mushrooms, sliced (button or cremini)
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt & black pepper
  • Optional: splash of pasta water or a squeeze of lemon

🥦 For the Veggies:

  • 2 cups mixed vegetables (e.g., broccoli, carrots, bell peppers)
  • 1 tbsp olive oil
  • Salt & pepper
  • Optional: balsamic glaze or lemon zest to finish

👨‍🍳 Step-by-Step Instructions

🔹 1. Start with the Veggies (Oven or Stovetop)

  1. Preheat oven to 425°F (220°C).
  2. Toss vegetables with olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 20–25 minutes, flipping halfway.
    OR sauté in a large skillet over medium-high heat for 6–8 minutes until tender and slightly charred.

🔹 2. Cook the Pasta

  1. Boil salted water and cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain and set aside.

🔹 3. Sear the Steak

  1. Season steak with salt and pepper.
  2. Heat oil in a cast iron or heavy pan over high heat.
  3. Sear steak for 3–4 minutes per side for medium-rare (adjust as needed).
  4. In last minute, add butter, garlic, and herbs. Baste with butter.
  5. Rest on a cutting board, loosely covered, for 5–10 minutes before slicing.

🔹 4. Cook the Chicken

  1. While steak rests, season chicken with salt, pepper, paprika, and garlic powder.
  2. In the same pan, add a little more oil if needed.
  3. Sear chicken over medium-high heat for 5–6 minutes per side until cooked through (internal temp 165°F / 74°C).
  4. Let rest briefly, then slice.

🔹 5. Make the Creamy Mushroom Pasta

  1. In a skillet, heat butter + olive oil over medium-high heat.
  2. Add mushrooms and cook until browned (5–7 minutes).
  3. Add garlic and cook for 1 minute.
  4. Pour in cream, bring to a gentle simmer.
  5. Stir in Parmesan until melted. Add cooked pasta and toss well.
  6. If too thick, add a splash of pasta water. Season with salt, pepper, and optional lemon.
