  • 2 boneless, skinless chicken breasts or thighs
  • Salt, pepper, paprika, garlic powder (or Italian seasoning)
  • 1 tbsp olive oil

  • 250g (ยฝ lb) pasta (fettuccine, penne, or spaghetti)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 250g (9 oz) mushrooms, sliced (button or cremini)
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • ยฝ cup grated Parmesan cheese
  • Salt & black pepper
  • Optional: splash of pasta water or a squeeze of lemon

  • 2 cups mixed vegetables (e.g., broccoli, carrots, bell peppers)
  • 1 tbsp olive oil
  • Salt & pepper
  • Optional: balsamic glaze or lemon zest to finish

๐Ÿ”น 1. Start with the Veggies (Oven or Stovetop)

  1. Preheat oven to 425ยฐF (220ยฐC).
  2. Toss vegetables with olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 20โ€“25 minutes, flipping halfway.
    OR sautรฉ in a large skillet over medium-high heat for 6โ€“8 minutes until tender and slightly charred.

  1. Boil salted water and cook pasta according to package instructions. Reserve ยฝ cup of pasta water, then drain and set aside.

  1. Season steak with salt and pepper.
  2. Heat oil in a cast iron or heavy pan over high heat.
  3. Sear steak for 3โ€“4 minutes per side for medium-rare (adjust as needed).
  4. In last minute, add butter, garlic, and herbs. Baste with butter.
  5. Rest on a cutting board, loosely covered, for 5โ€“10 minutes before slicing.

  1. While steak rests, season chicken with salt, pepper, paprika, and garlic powder.
  2. In the same pan, add a little more oil if needed.

  4. Let rest briefly, then slice.

  1. In a skillet, heat butter + olive oil over medium-high heat.
  2. Add mushrooms and cook until browned (5โ€“7 minutes).
  3. Add garlic and cook for 1 minute.

  5. Stir in Parmesan until melted. Add cooked pasta and toss well.
  6. If too thick, add a splash of pasta water. Season with salt, pepper, and optional lemon.
