🛒 Ingredients
🥩 For the Steak:
- 2 small ribeye or sirloin steaks (about 1″ thick)
- Salt & pepper
- 1 tbsp olive oil
- 1 tbsp butter
- 2 garlic cloves (smashed)
- Fresh rosemary or thyme (optional)
🍗 For the Chicken:
- 2 boneless, skinless chicken breasts or thighs
- Salt, pepper, paprika, garlic powder (or Italian seasoning)
- 1 tbsp olive oil
🍝 For the Creamy Mushroom Pasta:
- 250g (½ lb) pasta (fettuccine, penne, or spaghetti)
- 1 tbsp butter
- 1 tbsp olive oil
- 250g (9 oz) mushrooms, sliced (button or cremini)
- 2 garlic cloves, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt & black pepper
- Optional: splash of pasta water or a squeeze of lemon
🥦 For the Veggies:
- 2 cups mixed vegetables (e.g., broccoli, carrots, bell peppers)
- 1 tbsp olive oil
- Salt & pepper
- Optional: balsamic glaze or lemon zest to finish
👨🍳 Step-by-Step Instructions
🔹 1. Start with the Veggies (Oven or Stovetop)
- Preheat oven to 425°F (220°C).
- Toss vegetables with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 20–25 minutes, flipping halfway.
OR sauté in a large skillet over medium-high heat for 6–8 minutes until tender and slightly charred.
🔹 2. Cook the Pasta
- Boil salted water and cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain and set aside.
🔹 3. Sear the Steak
- Season steak with salt and pepper.
- Heat oil in a cast iron or heavy pan over high heat.
- Sear steak for 3–4 minutes per side for medium-rare (adjust as needed).
- In last minute, add butter, garlic, and herbs. Baste with butter.
- Rest on a cutting board, loosely covered, for 5–10 minutes before slicing.
🔹 4. Cook the Chicken
- While steak rests, season chicken with salt, pepper, paprika, and garlic powder.
- In the same pan, add a little more oil if needed.
- Sear chicken over medium-high heat for 5–6 minutes per side until cooked through (internal temp 165°F / 74°C).
- Let rest briefly, then slice.
🔹 5. Make the Creamy Mushroom Pasta
- In a skillet, heat butter + olive oil over medium-high heat.
- Add mushrooms and cook until browned (5–7 minutes).
- Add garlic and cook for 1 minute.
- Pour in cream, bring to a gentle simmer.
- Stir in Parmesan until melted. Add cooked pasta and toss well.
- If too thick, add a splash of pasta water. Season with salt, pepper, and optional lemon.
