One Pan Beef Stroganoff

Ingredients (4 servings)
- 1 lb lean ground beef (93% lean)
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups low-sodium beef broth
- 1 ½ cups whole wheat egg noodles
- ½ cup plain non-fat Greek yogurt
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp paprika
- Salt & pepper to taste
- 1 tsp olive oil
- Fresh parsley for garnish
Instructions
- Heat oil in a large pan over medium heat. Add onions and garlic, sauté for 2 minutes.
- Brown the beef, breaking it up with a spatula, until fully cooked. Drain excess fat if needed.
- Add mushrooms and cook until softened, about 3-4 minutes.
- Stir in Worcestershire sauce, Dijon mustard, paprika, salt, and pepper.
- Pour in beef broth and bring to a simmer. Add noodles and cook for 8-10 minutes, stirring occasionally until tender.
- Remove from heat and stir in Greek yogurt until creamy. Adjust seasoning if needed.
- Garnish with parsley and serve warm!
