Old-Fashioned Keto Chicken and Dumplings

Ingredients:-

For the Chicken:

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon xanthan gum (optional, for thickening)

For the Dumplings:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs

Instructions:-

  1. Prepare the Chicken:
    • Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. Make the Broth:
    • In the same pot, add the chicken broth, heavy cream, thyme, rosemary, parsley, garlic powder, and onion powder. Bring to a simmer over medium heat.
  3. Thicken the Broth (if using xanthan gum):
    • If you want a thicker broth, sprinkle xanthan gum over the simmering broth while whisking constantly. Continue whisking until the broth thickens slightly, about 1-2 minutes.
  4. Prepare the Dumplings:
    • In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Add melted butter and eggs, mixing until a thick dough forms.
  5. Form the Dumplings:
    • Drop tablespoon-sized portions of the dough into the simmering broth. Cover and let them cook for about 10-12 minutes, until they are cooked through and fluffy.
  6. Finish the Dish:
    • Return the cooked chicken to the pot and gently stir to combine. Taste and adjust seasoning if needed.
  7. Serve:
    • Ladle the chicken and dumplings into bowls and enjoy your keto-friendly comfort food!
