NO PASTA CAULIFLOWER MAC AND CHEESE
Makes 6 servings and each is Two points on Weight Watchers!
INGREDIENTS
1 head cauliflower 0 points
4 Tbsp Fat-free cream cheese 2 personal points
1 1 ⁄2cup s, shredded Low fat cheddar or colby cheese 8 personal points (1/2 c. reserved for top)
1 Tbsp Light cream 1 personal points
1 tbsp. mustard any kind
garlic powder salt and pepper to taste
INSTRUCTIONS
Chop the cauliflower florets into macaroni size pieces and steam in microwave until soft. Once soft drain and return to saucepan. Add cream cheese, cheese and cream and stir until incorporated. Add mustard, garlic powder, and salt pepper to taste. Be careful, it is delicious!
Add mixture to a baking dish, Everything was mixed well. I used Ninja foodie Bake function for 20 minutes at 350F to get all the cheeses incorporated.
Then cover with remaining 1/2 c. cheese and top with pepper and then broil until bubbly
