Mini Pineapple Upside Down Cakes – Weight Watchers Friendly

Ingredients:

  • 1 box yellow cake mix
  • Substitute pineapple juice for water.
  • 1 egg
  • 11 rings of canned pineapple
  • 11 maraschino cherries
  • 11 tablespoons light butter or margarine (1 per ramekin)
  • 22 tablespoons brown sugar (2 tablespoons per ramekin)

Instructions:

  1. Prepare the cake mix as per the directions on the box, replacing water with pineapple juice. Add one egg to the mix.
  2. Grease your ramekins with cooking spray.
  3. Place 1 tablespoon of melted light butter at the bottom of each ramekin, then add 2 tablespoons of brown sugar.
  4. Put a pineapple slice on top of the butter and sugar mixture, and place a maraschino cherry in the center of the pineapple.
  5. Pour the cake batter into each ramekin, filling it to the top.
  6. Bake in your air fryer at 350°F for approximately 16 minutes or until a toothpick inserted into the cake comes out clean.
