MINCE AND TATTIES
Ingredients:
- 500g minced beef
- 1 onion, finely chopped
- 2 carrots, diced
- 2 cloves of garlic, minced
- 2 tablespoons tomato paste
- 500ml beef stock
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- 1kg potatoes, peeled and chopped
- 50g butter
- 100ml milk
- Salt and pepper to taste
Instructions:
For the Mince:
- Heat some oil in a large pan over medium heat. Add the onions and carrots and cook until they start to soften, around 5 minutes.
- Add the minced garlic and cook for another minute.
- Add the minced beef to the pan and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the tomato paste, beef stock, and Worcestershire sauce. Season with salt and pepper to taste.
- Bring the mixture to a simmer and let it cook uncovered for about 20-30 minutes until the sauce has thickened. Stir occasionally.
For the Tatties (Potatoes):
- While the mince is cooking, place the chopped potatoes in a large pot and cover them with cold water. Add a pinch of salt.
- Bring the pot to a boil and cook the potatoes until they are fork-tender, usually around 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add the butter and milk to the pot with the potatoes. Mash everything together until smooth and creamy. Season with salt and pepper to taste.
To Serve:
- Spoon the mince onto plates or bowls.
- Serve the mashed potatoes alongside the mince.
