🥦 Mediterranean Roasted Cauliflower

Ingredients

  • 1 large head cauliflower, cut into medium florets
  • 1 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup green olives, pitted
  • ½ cup Kalamata olives, pitted
  • 4 garlic cloves, finely chopped
  • ¼ cup fresh parsley, chopped
  • 2 tbsp fresh dill or cilantro, chopped
  • 3 tbsp extra-virgin olive oil
  • 1½ tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ½ tsp chili flakes
  • ¾ tsp salt
  • ½ tsp black pepper
  • Zest of ½ lemon
  • 1–2 tbsp fresh lemon juice

⭐ For the crispy golden topping

  • ⅓ cup panko breadcrumbs
  • 1 tbsp olive oil
  • 1 tbsp grated Parmesan or nutritional yeast (optional)
  • Pinch of paprika
  • Pinch of salt

Method

1. Heat the oven very hot.
Preheat to 220°C / 425°F. For extra browning, use convection/fan at about 210°C / 410°F.

2. Season the cauliflower.
Put the cauliflower, red onion and garlic in a large bowl. Add olive oil, smoked paprika, cumin, oregano, chili flakes, salt and pepper. Toss extremely well so the cauliflower is coated.

3. Roast.
Spread everything onto a large baking sheet in a single layer. Don’t crowd it.

Roast for 20 minutes.

4. Add the tomatoes and olives.
Add the tomatoes and both types of olives. Toss gently and return to the oven for another 10–15 minutes, until the cauliflower has dark golden/brown edges and the tomatoes are caramelized.

5. Make it extra crispy.
Mix the panko with 1 tbsp olive oil, paprika, salt and Parmesan if using. Sprinkle over the cauliflower during the last 5–7 minutes of roasting.

6. Finish like the picture.
Remove from the oven and immediately add:

  • lemon zest
  • lemon juice
  • lots of fresh parsley
  • fresh dill/cilantro
  • a small drizzle of good olive oil

Taste and adjust salt and lemon.

🔥 The secrets to making it REALLY good

  • Don’t steam the cauliflower first. Roast it raw so the edges caramelize.
  • Dry the cauliflower thoroughly before seasoning.
  • Use a large sheet pan—crowding creates steam instead of browning.
  • Roast until you see deep brown edges, not just pale golden cauliflower.
  • Add lemon after roasting, rather than before, for brighter flavor.
  • A combination of Kalamata + green olives gives much more depth.
  • For the closest texture to the photo, use medium/large cauliflower pieces, not tiny florets.

Optional sauce — highly recommended

Whisk together:

  • ½ cup Greek yogurt
  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • 1 small grated garlic clove
  • 1 tbsp olive oil
  • pinch of salt
  • 1–2 tbsp water to thin

Spread the sauce on the plate and pile the hot roasted cauliflower on top. Finish with parsley, olives and lemon.

Result: crispy, smoky cauliflower + sweet roasted tomatoes + salty olives + sharp red onion + fresh herbs + creamy lemon-tahini sauce.
