Ingredients
For the Dough
• 4 cups all-purpose flour (500g)
• 1 tsp baking powder
• ½ tsp salt
• 1 cup margarine or butter (227g)
• 1 cup cold water (240ml)
• 1 large egg (for egg wash)
For the Filling
• 2 cups minced beef (300g)
• 2 medium potatoes, diced (250g)
• 2 medium carrots, diced (150g)
• 1 medium onion, chopped
• 2 tbsp vegetable oil
• 2 seasoning cubes
• 1 tsp curry powder
• ½ tsp thyme
• Salt and pepper to taste
• 2 tbsp flour mixed with ¼ cup water for thickening
Instructions
Prepare the Filling
Heat oil in a pan and sauté onions until soft.
Add minced beef and cook until browned.
Stir in potatoes, carrots, curry powder, thyme, seasoning cubes, salt, and pepper.
Add a little water and allow vegetables to cook until tender.
Pour in the flour mixture and stir until the filling thickens slightly.
Remove from heat and allow to cool completely.
Prepare the Dough
In a large bowl, combine flour, baking powder, and salt.
Rub in margarine or butter until crumbly.
Gradually add cold water and mix until a soft dough forms.
Cover and allow dough to rest for 10 minutes.
Shape the Meat Pies
Preheat oven to 180°C (350°F).
Roll out the dough on a lightly floured surface.
Cut into circles using a bowl or cutter.
Place some filling on one side of each dough circle.
Fold over and seal edges with a fork.
Arrange on a lined baking tray.
Brush with beaten egg.
Bake
Bake for 30–35 minutes or until golden brown.
Allow to cool slightly before serving.
Serve warm with a chilled drink or tea.
