MARINARA MEAT LOAF PATTIES: LOW-CARBING AMONG FRIENDS

Ingredients

For the Patties

  • 1 lb ground beef (80/20 for juiciness)
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp chili flakes (optional, for a bit of heat)

For the Marinara Sauce

  • 1 cup sugar-free marinara sauce
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil

Toppings

  • 1/2 cup shredded mozzarella cheese
  • Fresh basil leaves (optional, for garnish)

Instructions

Step 1: Prepare the Patties

  1. In a large mixing bowl, combine ground beef, almond flour, Parmesan, egg, minced garlic, onion powder, oregano, salt, pepper, and chili flakes.
  2. Mix gently until just combined. Avoid overmixing to keep the patties tender.
  3. Shape the mixture into 6 round patties, about 1 inch thick.

Step 2: Cook the Patties

  1. Heat a large skillet over medium heat and add a little olive oil or butter.
  2. Place the patties in the skillet and cook for 4-5 minutes on each side, or until browned and cooked through.
  3. Remove the patties from the skillet and set aside.

Step 3: Simmer the Marinara Sauce

  1. In the same skillet, add olive oil and pour in the marinara sauce.
  2. Stir in garlic powder and dried basil, then simmer for 2-3 minutes.

Step 4: Assemble

  1. Place the cooked patties back into the skillet with the sauce.
  2. Spoon sauce over each patty and sprinkle shredded mozzarella on top.
  3. Cover and cook for 2-3 more minutes, until the cheese melts and is bubbly.

Step 5: Serve

  • Garnish with fresh basil leaves and serve hot.
  • Pair with a side of sautéed zucchini noodles or a fresh salad for a complete low-carb meal
