MARINARA MEAT LOAF PATTIES: LOW-CARBING AMONG FRIENDS

Ingredients
For the Patties
- 1 lb ground beef (80/20 for juiciness)
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp chili flakes (optional, for a bit of heat)
For the Marinara Sauce
- 1 cup sugar-free marinara sauce
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp dried basil
Toppings
- 1/2 cup shredded mozzarella cheese
- Fresh basil leaves (optional, for garnish)
Instructions
Step 1: Prepare the Patties
- In a large mixing bowl, combine ground beef, almond flour, Parmesan, egg, minced garlic, onion powder, oregano, salt, pepper, and chili flakes.
- Mix gently until just combined. Avoid overmixing to keep the patties tender.
- Shape the mixture into 6 round patties, about 1 inch thick.
Step 2: Cook the Patties
- Heat a large skillet over medium heat and add a little olive oil or butter.
- Place the patties in the skillet and cook for 4-5 minutes on each side, or until browned and cooked through.
- Remove the patties from the skillet and set aside.
Step 3: Simmer the Marinara Sauce
- In the same skillet, add olive oil and pour in the marinara sauce.
- Stir in garlic powder and dried basil, then simmer for 2-3 minutes.
Step 4: Assemble
- Place the cooked patties back into the skillet with the sauce.
- Spoon sauce over each patty and sprinkle shredded mozzarella on top.
- Cover and cook for 2-3 more minutes, until the cheese melts and is bubbly.
Step 5: Serve
- Garnish with fresh basil leaves and serve hot.
- Pair with a side of sautéed zucchini noodles or a fresh salad for a complete low-carb meal
