Knocked up a cheap salad
Ingredients
🔹 tin of black beans, rinsed
🔹 tin of mixed bean salad, rinsed
🔹sweetcorn
🔹spring onion
🔹red pepper
🔹cherry tomatoes
🔹 onion
Made dressing of olive oil, sea salt, white wine vinegar, lime juice, basil and corriander. Stir it in. This is all items I’ve had in my cupboard and fridge.
Will add some avocado in tomorrow and I have some left over rice and tofu from dinner to go with it. A filling, nutritious and protein packed lunch. Trying to eat less of bread and fake vegan meat as much as I love them I’m trying to eat a bit cleaner as I have a holiday in October which is my weight loss goal.
