Key Lime Pie Trifle

Ingredients

  • 1 ½ cups graham cracker crumbs divided
  • 4 tablespoons unsalted butter melted
  • 2 cups heavy whipping cream chilled
  • 8 ounces cream cheese softened
  • ½ cup powdered sugar
  • ½ cup key lime juice
  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract

Method 

  1. Mix 1 cup graham cracker crumbs with melted butter. Reserve ½ cup crumbs.
  2. Press the buttered crumb mixture into the bottom of your serving dish.
  3. Beat the heavy whipping cream until stiff peaks form.
  4. In another bowl, beat the cream cheese until smooth.
  5. Add powdered sugar, lime juice, zest, and vanilla. Beat until creamy.
  6. Fold the whipped cream into the cream cheese mixture until light and fluffy.
  7. Spread half the filling over the crumb base.
  8. Sprinkle with some reserved crumbs.
  9. Add the remaining filling.
  10. Top with the rest of the crumbs and extra lime zest.
  11. Chill for at least 2 hours before serving.

Notes

  • Use fresh lime juice for the best flavor.
  • Chill your bowl and beaters before whipping the cream.
  • Do not overmix the whipped cream.
  • Assemble a few hours before serving for the best texture
