Keto Zucchini Sugar Loaf

Ingredients:

  • 2 cups finely shredded zucchini (about 1 medium zucchini)
  • 2 large eggs
  • 1/2 cup melted coconut oil or unsalted butter
  • 1/2 cup granulated erythritol or another keto-friendly sweetener
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Optional: 1/2 cup chopped nuts or sugar-free chocolate chips for added texture and flavor

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
  2. Prepare the Zucchini:
    • Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much moisture as possible. This helps prevent the loaf from being too wet.
  3. Mix Wet Ingredients:
    • In a large bowl, whisk together the eggs, melted coconut oil (or butter), erythritol, and vanilla extract until well combined.
  4. Combine Dry Ingredients:
    • In another bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, cinnamon, and salt.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in Zucchini:
    • Gently fold the shredded zucchini into the batter. If you’re using nuts or chocolate chips, fold those in as well.
  7. Pour Batter into Pan:
    • Pour the batter into the prepared loaf pan and spread it out evenly.
  8. Bake:
    • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool:
    • Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  10. Serve:
    • Slice and enjoy! This loaf pairs wonderfully with a bit of butter or as is.

  • Make sure to squeeze out as much moisture from the zucchini as possible to avoid a soggy loaf.
  • Store the loaf in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. It also freezes well for up to 3 months.
