Keto Zucchini Sugar Loaf

Ingredients:
- 2 cups finely shredded zucchini (about 1 medium zucchini)
- 2 large eggs
- 1/2 cup melted coconut oil or unsalted butter
- 1/2 cup granulated erythritol or another keto-friendly sweetener
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- Optional: 1/2 cup chopped nuts or sugar-free chocolate chips for added texture and flavor

Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
- Prepare the Zucchini:
- Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much moisture as possible. This helps prevent the loaf from being too wet.
- Mix Wet Ingredients:
- In a large bowl, whisk together the eggs, melted coconut oil (or butter), erythritol, and vanilla extract until well combined.
- Combine Dry Ingredients:
- In another bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, cinnamon, and salt.

- Fold in Zucchini:
