Bets keto ground beef taco

Ingredients:

For the Beef Filling:

  • 1 lb (450g) ground beef (85% lean is ideal)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 cup beef broth (or water)

For Serving:

  • Romaine lettuce or iceberg lettuce leaves (for taco shells)
  • Shredded cheddar cheese
  • Diced tomatoes
  • Sliced avocado
  • Sliced jalapeños (optional)
  • Chopped cilantro
  • Sour cream
  • Lime wedges

Instructions:

  1. Cook the Beef:
    1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
    2. Add the chopped onion and cook for another 3-4 minutes, until the onion is soft and translucent.
    3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
    4. Add the chili powder, cumin, smoked paprika, cayenne pepper (if using), oregano, salt, and black pepper. Stir to combine and cook for another minute.
    5. Pour in the beef broth (or water) and stir to combine. Let the mixture simmer for about 5-7 minutes, until most of the liquid has evaporated and the beef is well-coated with the spices.
  2. Prepare the Lettuce Wraps:
    1. Carefully separate the lettuce leaves to use as taco shells. Rinse and pat them dry with a paper towel.
  3. Assemble the Tacos:
    1. Spoon the seasoned beef mixture into each lettuce leaf.
    2. Top with your choice of shredded cheddar cheese, diced tomatoes, sliced avocado, and sliced jalapeños if you like extra heat.
    3. Add a dollop of sour cream and a sprinkle of chopped cilantro.
    4. Serve with lime wedges on the side for an extra burst of flavor.
