Keto Waffles
Ingredients:
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 tbsp granulated erythritol or other keto-friendly sweetener (optional)
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup unsweetened almond milk (or other low-carb milk)
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract

Instructions:
- Preheat your waffle maker according to its instructions.
- In a large bowl, whisk together the almond flour, coconut flour, sweetener (if using), baking powder, and salt.
- In another bowl, beat the eggs, then mix in the almond milk, melted butter (or coconut oil), and vanilla extract.
- Combine the wet and dry ingredients until smooth. The batter will be thicker than traditional waffle batter.
- Grease the waffle iron lightly with cooking spray or brush with oil to prevent sticking.
- Pour the batter into the preheated waffle maker. The amount will depend on the size of your waffle maker. Close the lid and cook according to your waffle maker’s instructions, usually around 3-5 minutes, until the waffles are golden brown and crispy.
- Carefully remove the waffle and repeat with the remaining batter.
- Serve warm with your favorite keto-friendly toppings like berries, whipped cream, or sugar-free syrup.
