Keto Toffee Peanuts
Ingredients:
- 1 cup unsalted peanuts (roasted, preferably)
- 1/2 cup butter (unsalted)
- 1/2 cup powdered erythritol or another keto-friendly sweetener
- 1/4 cup almond flour
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- Optional: 1/4 teaspoon ground cinnamon for added flavor

Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Toast Peanuts: Spread the peanuts on the baking sheet and toast them in the preheated oven for about 5-7 minutes, or until they’re lightly golden. Keep an eye on them to avoid burning. Remove from the oven and let them cool slightly.
- Prepare Toffee Mixture:
- In a medium saucepan, melt the butter over medium heat.
- Once melted, stir in the powdered erythritol, almond flour, and sea salt. Continue to cook, stirring constantly, until the mixture starts to bubble and thickens slightly. This should take about 3-4 minutes.
- Combine Peanuts and Toffee:
- Add the toasted peanuts to the toffee mixture and stir until the peanuts are well coated.
- Cool and Set:
- Transfer the peanut-toffee mixture back onto the lined baking sheet and spread it out into an even layer.
- Allow it to cool completely at room temperature. As it cools, the toffee will harden.
- Break and Store:
- Once cooled and hardened, break the toffee peanuts into pieces.
- Store in an airtight container at room temperature for up to a week, or refrigerate for longer storage.
