Keto Toffee Peanuts

Ingredients:

  • 1 cup unsalted peanuts (roasted, preferably)
  • 1/2 cup butter (unsalted)
  • 1/2 cup powdered erythritol or another keto-friendly sweetener
  • 1/4 cup almond flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • Optional: 1/4 teaspoon ground cinnamon for added flavor

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Toast Peanuts: Spread the peanuts on the baking sheet and toast them in the preheated oven for about 5-7 minutes, or until they’re lightly golden. Keep an eye on them to avoid burning. Remove from the oven and let them cool slightly.
  3. Prepare Toffee Mixture:
    • In a medium saucepan, melt the butter over medium heat.
    • Once melted, stir in the powdered erythritol, almond flour, and sea salt. Continue to cook, stirring constantly, until the mixture starts to bubble and thickens slightly. This should take about 3-4 minutes.
  4. Combine Peanuts and Toffee:
    • Add the toasted peanuts to the toffee mixture and stir until the peanuts are well coated.
  5. Cool and Set:
    • Transfer the peanut-toffee mixture back onto the lined baking sheet and spread it out into an even layer.
    • Allow it to cool completely at room temperature. As it cools, the toffee will harden.
  6. Break and Store:
    • Once cooled and hardened, break the toffee peanuts into pieces.
    • Store in an airtight container at room temperature for up to a week, or refrigerate for longer storage.

Feel free to adjust the sweetness or add other flavors like a pinch of cinnamon or a sprinkle of sea salt on top before it sets. Enjoy your keto-friendly toffee peanuts!
