Instructions:
Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
Cook the beef: Heat olive oil in a skillet, add onion and garlic, and sauté for 2 minutes. Add ground beef and cook until browned. Drain excess grease.
Season it up: Stir in taco seasoning and diced tomatoes. Let simmer for 2 minutes, then remove from heat.
Prepare the egg mixture: In a bowl, whisk eggs, heavy cream, salt, and pepper.
Assemble the pie: Spread the beef mixture evenly in the greased pie dish. Pour the egg mixture over it, then top with shredded cheese.
Bake for 25-30 minutes or until the top is golden and the center is set.
Cool for a few minutes, then slice and serve with your favorite toppings
