Keto Taco Casserole

Ingredients:

  • 1 lb (450g) ground beef (or ground turkey)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (ensure it’s keto-friendly, or use homemade)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cauliflower rice (you can use store-bought or make your own by pulsing cauliflower florets in a food processor until they resemble rice)
  • 1 cup chopped bell peppers (optional, for added veggies)
  • 1/2 cup sliced black olives (optional)
  • Salt and pepper, to taste
  • Chopped fresh cilantro (for garnish, optional)
  • Sliced jalapeños (for garnish, optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Meat:
    • In a large skillet over medium heat, cook the ground beef (or turkey) until browned and cooked through. Break it up into crumbles as it cooks.
    • Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic and cook for another 1 minute, until fragrant.
    • Stir in the taco seasoning, diced tomatoes (with their juice), and cauliflower rice. If using bell peppers and olives, add them now.
    • Cook the mixture for about 5-7 minutes, until everything is well combined and heated through. Adjust seasoning with salt and pepper if needed.
  3. Assemble the Casserole:
    • Transfer the beef mixture to a 9×13-inch baking dish or a similar-sized oven-safe dish.
    • Spread the sour cream evenly over the top of the beef mixture.
    • Sprinkle the shredded cheddar and mozzarella cheeses evenly over the sour cream layer.
  4. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
    • If desired, you can broil for an additional 2-3 minutes to get a golden brown top.
  5. Garnish and Serve:
    • Remove from the oven and let it cool slightly before serving.
    • Garnish with chopped fresh cilantro and sliced jalapeños if desired.
