Keto Stuffed Cabbages Rolls
Ingredients:
For the Cabbage Rolls:
- 1 large head of cabbage
- 1 pound ground beef or ground turkey
- 1/2 pound ground pork
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup riced cauliflower
- 1 can (14.5 oz) diced tomatoes (no sugar added)
- 1/4 cup tomato paste
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup beef or vegetable broth
For the Sauce:
- 1 can (14.5 oz) diced tomatoes (no sugar added)
- 2 tablespoons tomato paste
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350°F (175°C).
- Bring a large pot of water to a boil. Carefully remove the core of the cabbage, and place the whole cabbage into the boiling water for about 3-4 minutes. This will soften the leaves and make them easier to work with. Remove the cabbage from the water and allow it to cool.
- In a large skillet, cook the ground beef (or turkey) and ground pork over medium-high heat until browned. Add the chopped onion and minced garlic and sauté for a few minutes until they become soft.
- Stir in the riced cauliflower, diced tomatoes, tomato paste, dried oregano, salt, and pepper. Cook for a few minutes until the mixture is well combined.
- Carefully remove the leaves from the cabbage, and cut away the thick vein from each leaf to make them easier to roll.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides to create a neat roll. Place the rolls seam-side down in a baking dish.
- In a separate bowl, mix the ingredients for the sauce: diced tomatoes, tomato paste, dried basil, salt, and pepper. Pour the sauce over the cabbage rolls in the baking dish.
- Pour the beef or vegetable broth into the baking dish around the cabbage rolls. This helps keep the rolls moist and flavorful.
- Cover the baking dish with foil and bake for about 1 hour.
- Remove the foil and bake for an additional 15-20 minutes, or until the cabbage rolls are tender and the sauce is bubbling.
- Serve the keto stuffed cabbage rolls hot, garnished with fresh herbs if desired….
