Keto Pizza Roll-ups

Ingredients:

  • 8 slices of mozzarella cheese (thinly sliced or pre-sliced)
  • 8 slices of pepperoni or salami (optional; can add more as desired)
  • 1/4 cup pizza sauce (low-carb, sugar-free)
  • Italian seasoning, to taste
  • Optional toppings: sliced olives, cooked sausage, mushrooms, etc.

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Melt Cheese Slices: Place the mozzarella slices on the prepared baking sheet, ensuring they don’t overlap. Bake for about 5-7 minutes or until the edges start to bubble and turn golden.
  3. Add Sauce and Toppings: Remove the baking sheet from the oven. Spread a thin layer of pizza sauce on each melted cheese slice. Sprinkle with Italian seasoning, and add a slice of pepperoni or your chosen toppings.
  4. Roll-up: Once the cheese has slightly cooled but is still flexible, carefully roll each slice into a roll-up. Use tongs or a spatula if it’s too hot to handle directly.
  5. Cool & Serve: Let the roll-ups cool for a minute to help them hold their shape. Serve with extra pizza sauce for dipping if desired.

Tips:

  • For Extra Crispiness: Bake for an extra 1-2 minutes after rolling to make them crispier.
  • Add Fresh Basil: Garnish with fresh basil for extra flavor.
