Ingredients:

  • 1 lb thinly sliced beef (such as ribeye or sirloin)
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 8 slices provolone cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: sliced mushrooms, for added flavor

Instructions:

  1. Prepare the Beef:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the thinly sliced beef to the skillet and cook until browned and cooked through, about 2-3 minutes per side. Season with salt and pepper to taste. Remove from skillet and set aside.
  2. Cook the Vegetables:
    • In the same skillet, add another tablespoon of olive oil if needed.
    • Add the sliced onions, bell peppers, and optional mushrooms to the skillet. Cook until the vegetables are tender and slightly caramelized, about 5-7 minutes. Season with salt and pepper.
  3. Assemble the Roll-Ups:
    • Preheat your oven to 375°F (190°C).
    • Lay out the slices of provolone cheese on a baking sheet lined with parchment paper.
    • Divide the cooked beef evenly among the slices of cheese, placing the beef on one end of each slice.
  4. Add the Vegetables:
    • Top each pile of beef with a portion of the cooked vegetables.
  5. Roll Up:
    • Starting from the end with the beef and vegetables, tightly roll up each slice of provolone cheese. The cheese will soften and act as the outer layer of your roll-up.
  6. Bake:
    • Place the roll-ups seam-side down on the baking sheet.
    • Bake in the preheated oven for about 5-7 minutes, or until the cheese is melted and slightly bubbly.
  7. Serve:
    • Remove from the oven and let cool slightly before serving.
    • Optionally, you can serve with a side of low-carb dipping sauce or additional vegetables.
