Ingredients:
- 1 lb thinly sliced beef (such as ribeye or sirloin)
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 8 slices provolone cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Optional: sliced mushrooms, for added flavor

Instructions:
- Prepare the Beef:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the thinly sliced beef to the skillet and cook until browned and cooked through, about 2-3 minutes per side. Season with salt and pepper to taste. Remove from skillet and set aside.
- Cook the Vegetables:
- In the same skillet, add another tablespoon of olive oil if needed.
- Add the sliced onions, bell peppers, and optional mushrooms to the skillet. Cook until the vegetables are tender and slightly caramelized, about 5-7 minutes. Season with salt and pepper.
- Assemble the Roll-Ups:
- Preheat your oven to 375°F (190°C).
- Lay out the slices of provolone cheese on a baking sheet lined with parchment paper.
- Divide the cooked beef evenly among the slices of cheese, placing the beef on one end of each slice.
- Add the Vegetables:

- Starting from the end with the beef and vegetables, tightly roll up each slice of provolone cheese. The cheese will soften and act as the outer layer of your roll-up.
- Bake:
- Place the roll-ups seam-side down on the baking sheet.
- Bake in the preheated oven for about 5-7 minutes, or until the cheese is melted and slightly bubbly.
- Serve:
- Remove from the oven and let cool slightly before serving.
