Ingredients:

  • 1 medium ripe pineapple, peeled, cored, and cut into chunks (about 4 cups)
  • 1 cup coconut milk (or other milk of your choice)
  • 2 tablespoons honey or sweetener of choice (adjust to taste)
  • 1 teaspoon vanilla extract
  • Juice of 1 lime (optional, for a bit of tanginess)

Instructions:

  1. Prepare the Pineapple:
    • Peel the pineapple, remove the core, and cut it into chunks. You can also use canned pineapple chunks if fresh is not available.
  2. Freeze the Pineapple:
    • Arrange the pineapple chunks in a single layer on a baking sheet lined with parchment paper or a silicone mat. Freeze for at least 1-2 hours until the pineapple is firm.
  3. Blend the Ingredients:
    • In a blender or food processor, combine the frozen pineapple chunks, coconut milk, honey (or sweetener), vanilla extract, and lime juice (if using).
    • Blend until smooth and creamy. You may need to stop and scrape down the sides a few times to ensure everything is blended evenly.
  4. Serve:
    • Serve immediately for a soft-serve consistency. If you prefer a firmer texture, transfer the mixture to a container and freeze for about 30 minutes to 1 hour before serving.
  5. Garnish (optional):
    • Garnish with fresh pineapple wedges, mint leaves, or a sprinkle of toasted coconut flakes if desired.
