Ingredients:

  • For the Meatloaf:
    • 1 lb ground beef (80/20 is ideal for moisture)
    • 1 lb ground pork
    • 1 cup shredded provolone cheese
    • 1 cup diced bell peppers (green, red, or both)
    • 1 cup diced onions
    • 2 cloves garlic, minced
    • 1 large egg
    • 1/2 cup almond flour
    • 1 tsp dried oregano
    • 1 tsp dried basil
    • Salt and pepper, to taste
  • For the Topping:
    • 1 cup sliced provolone cheese
    • 1 tbsp olive oil
    • 1/2 cup diced bell peppers
    • 1/2 cup diced onions

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Meatloaf Mixture:
    • In a large bowl, combine the ground beef, ground pork, shredded provolone cheese, diced bell peppers, diced onions, minced garlic, egg, almond flour, oregano, basil, salt, and pepper.
    • Mix until just combined. Be careful not to overmix, as this can make the meatloaf dense.
  3. Form the Meatloaf:
    • Transfer the meat mixture to a baking sheet or a meatloaf pan and shape it into a loaf.
  4. Prepare the Topping:
    • In a skillet, heat the olive oil over medium heat. Add the diced bell peppers and onions, and sauté until they are tender and slightly caramelized, about 5-7 minutes.
    • Spoon the sautéed vegetables over the top of the meatloaf.
  5. Bake the Meatloaf:
    • Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Add the Cheese:
    • Remove the meatloaf from the oven and top it with the sliced provolone cheese.
    • Return the meatloaf to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  7. Rest and Serve:
    • Let the meatloaf rest for about 10 minutes before slicing. This helps it hold its shape and makes it easier to cut.
