Ingredients:
- For the Meatloaf:
- 1 lb ground beef (80/20 is ideal for moisture)
- 1 lb ground pork
- 1 cup shredded provolone cheese
- 1 cup diced bell peppers (green, red, or both)
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 large egg
- 1/2 cup almond flour
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- For the Topping:
- 1 cup sliced provolone cheese
- 1 tbsp olive oil
- 1/2 cup diced bell peppers
- 1/2 cup diced onions

Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Meatloaf Mixture:
- In a large bowl, combine the ground beef, ground pork, shredded provolone cheese, diced bell peppers, diced onions, minced garlic, egg, almond flour, oregano, basil, salt, and pepper.
- Mix until just combined. Be careful not to overmix, as this can make the meatloaf dense.
- Form the Meatloaf:
- Transfer the meat mixture to a baking sheet or a meatloaf pan and shape it into a loaf.
- Prepare the Topping:
