Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, coconut flour, erythritol, and salt.
- Add the cold butter and mix until the mixture resembles coarse crumbs.
- Add the egg and vanilla extract, mixing until a dough forms.
- Press the dough evenly into a 9-inch pie pan. Poke holes in the bottom of the crust with a fork.
- Bake for 10-12 minutes, or until the crust is just golden. Set aside to cool.
2. Make the Filling:
- In a large bowl, whisk together the melted butter, erythritol, and sugar-free maple syrup.
- Add the eggs, vanilla, and salt, whisking until smooth.
- Stir in the pecan halves until well-coated with the mixture.
3. Assemble and Bake:
- Pour the pecan filling into the prepared crust.
- Bake at 350°F for 35-40 minutes, or until the filling is set but slightly jiggles in the center.
- Let the pie cool completely before serving.
