Keto Nachos

Ingredients

For the Chips:

  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup almond flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt

For the Toppings:

  • 1 lb ground beef or chicken
  • 1 packet taco seasoning (low carb, or homemade)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup sliced jalapeños
  • 1/4 cup diced red onions
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • Fresh cilantro, chopped

Instructions

For the Chips:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and almond flour.
  3. Microwave for about 1 minute or until the cheese is melted. Mix well until a dough forms.
  4. Place the dough between two pieces of parchment paper and roll it out into a thin layer.
  5. Remove the top piece of parchment paper and cut the dough into triangle-shaped chips.
  6. Transfer the chips to the prepared baking sheet.
  7. Sprinkle garlic powder, paprika, and salt over the chips.
  8. Bake for 10-12 minutes or until the chips are crispy and golden brown. Let them cool.

For the Toppings:

  1. In a skillet over medium heat, cook the ground beef or chicken until fully cooked. Drain any excess fat.
  2. Add the taco seasoning to the meat and stir until well combined. Cook for another 2-3 minutes.
  3. Arrange the baked chips on a serving platter.
  4. Sprinkle the seasoned meat over the chips.
  5. Add shredded cheddar cheese on top of the meat.
  6. Layer with diced tomatoes, sliced black olives, jalapeños, and diced red onions.
  7. Add dollops of sour cream and guacamole on top.
  8. Garnish with fresh cilantro.
