Ingredients
For the Chips:
- 1 1/2 cups shredded mozzarella cheese
- 3/4 cup almond flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
For the Toppings:
- 1 lb ground beef or chicken
- 1 packet taco seasoning (low carb, or homemade)
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/2 cup sliced black olives
- 1/4 cup sliced jalapeños
- 1/4 cup diced red onions
- 1/4 cup sour cream
- 1/4 cup guacamole
- Fresh cilantro, chopped
Instructions
For the Chips:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a microwave-safe bowl, combine the shredded mozzarella cheese and almond flour.
- Microwave for about 1 minute or until the cheese is melted. Mix well until a dough forms.
- Place the dough between two pieces of parchment paper and roll it out into a thin layer.
- Remove the top piece of parchment paper and cut the dough into triangle-shaped chips.
- Transfer the chips to the prepared baking sheet.
- Sprinkle garlic powder, paprika, and salt over the chips.
- Bake for 10-12 minutes or until the chips are crispy and golden brown. Let them cool.
For the Toppings:
- In a skillet over medium heat, cook the ground beef or chicken until fully cooked. Drain any excess fat.
- Add the taco seasoning to the meat and stir until well combined. Cook for another 2-3 minutes.
- Arrange the baked chips on a serving platter.
- Sprinkle the seasoned meat over the chips.
- Add shredded cheddar cheese on top of the meat.
- Layer with diced tomatoes, sliced black olives, jalapeños, and diced red onions.
- Add dollops of sour cream and guacamole on top.
- Garnish with fresh cilantro.
